Orange is often associated with autumn due to the changing colour of the leaves and to pumpkins.
Pumpkins have this beautiful colour as they are rich in beta-carotene, a strong antioxidant. Pumpkins also have diuretic and sedative properties.
RECIPE: PUMPKIN GNOCCHI
Ingredients for 4 people:
1 kg pumpkin
100 gr flour
Grated Parmesan cheese
Chop the flesh of the pumpkin into large pieces and cook in the oven or boil in salted water.
Then place pumpkin, flour, egg, into a bowl, add a pinch of salt and the nutmeg, then stir. Drop teaspoonfuls of the mixture in a large pan of boiling water and drain the Gnocchi as soon as they come to the surface.
Add the tomato sauce and a sprinkle of Parmesan.
