Beef fillet with Vino Nobile sauce

Beef fillet with a sauce of Montepulciano Vino Nobile is a typical dish from Valdichiana, a lovely valley between Umbria and Tuscany that impressed Von Goethe so much so that in his famous Italian Journey he wrote: “the most beautiful valleys I’ve ever seen”.

The ingredients for this recipe originate from this land. Chianina fillet, Italian cattle breed and Montepulciano Vino Nobile, called “the king of every wine” by the famous ‘600 Italian poet Francesco Redi.


Beef fillet

½ bottle of Montepulciano Vino Nobile

1 teaspoon of honey



Heat the grill.  Law the meat down, and cook for a few minutes until rare, then add salt.

Pour the Vino Nobile into a pan, add a teaspoon of honey and simmer over medium heat until most of the liquid has evaporated.

Put the Vino Nobile dressing onto a plate and pour over the meat. Your beef fillet is now ready to be served:  Buon appetito!
