Chianti spaghetti sauce recipe


Chianti spaghetti sauce is a very tasty first course, made with bacon and the famous Tuscan wine.

Serves 4

400 gr of spaghetti

200 gr of speck ham

1 glass of Chianti (about 250 ml)

1 leek

45 gr of butter



Grated Parmesan cheese


First, we prepare the sauce. Cut the leek into thin slices and place in a heated pan, with 30 grams of butter. Never opt for onions instead, as leeks have a more delicate flavour and blend better with full-bodied wines. Once the leek is golden, add the Chianti and stir until the alcohol content evaporates. At this stage remove the pan from the heat and whisk the mix until you get a rich creamy sauce; add salt and pepper.

Cut the speck into strips and let it stir-fry for a few minutes with the remaining butter, until it becomes crispy. Cook the spaghetti in boiling water, drain it and reserve a ladle of cooking water. Add the spaghetti to the speck, pour in the cooking water and stir.

Sprinkle with grated Parmesan cheese and your Chianti spaghetti sauce is ready to be served!
