A great wine can have many faces, both “still” and full of “movement”. The Farnito wines, which we have introduced in this Super Tuscan Carpineto series, is no exception. The Farnito Brut is a perfect example of an ex exceptional sparkling wine made from Chardonnay vineyards in their purest form. It is the perfect bubbly counterpart of the Farnito Chardonnay. This sparkling wine is the product of a long and thorough process which starts with the selection of grapes and ends up in oak barrels to age.
The characteristics of the pale-yellow bubbles is achieved by a pied de cuvée, a base of selected yeasts which triggers the first fermentation. This wine is subjected to rigorous checks and is aged for no less than 16 months (8 in the barrel, 8 in the bottle) and is continuously moved or “agitated” to keep the process alive. This is a delicate process as it ensure the fermented wine yeast produces the flavors, scents and essence of this Brut sparkling wine.
The Farnito Brut is complex to the nose and offers obvious hints of spices, fresh fruit, licorice and vanilla. The qualities which are tasted on the palate, are just as constant as the olfactory aromas. The Farnito Brut has a solid structure and pairs well with almost any meal, not just appetizers. It can be accompanied with grilled fish, baked fish, raw fish, white meats or cream dishes. It is also a classic dessert wine which can be had in place of a vin santo or a brandy and serves as a perfect wine to cleanse the palate after a meal. It is an ideal companion to a meal since it is a wine which feels pleasant to the touch and taste buds. This fresh and refreshing wine is perfect for a special evening or an important lunch.
