Here’s a great recipe using a rich, creamy white sauce.

8 ounces fresh skinless salmon, cut into one-inch cubes
1 box fresh or dried lasagna shells
2 tbsp. olive oil
3 cloves fresh garlic, sliced thinly
4 green onions, chopped finely
1 tbsp. dried basil
1 tbsp. dried oregano
1 tsp. nutmeg
1 tsp. crushed red pepper
1 stick butter
16 ounces heavy cream
8 ounces ricotta cheese
8 ounces grated Pecorino Romano cheese
16 ounces shredded mozzarella
2 cups diced Roma tomatoes
8 ounces shaved Parmigiano Regianno cheese

Preparation for Salmon Lasagna Recipe
Set oven to 375 degrees. Prepare the shells according to the directions. Cool, if needed.
In a large skillet, sauté olive oil with garlic and onions until you see a little browning. Add the seasonings and then melt in the butter. Add the cream and the salmon. Heat until bubbly.
Stir in the Pecorino Romano cheese and ricotta. Gently mash the salmon pieces with a cook’s spoon. You still want small chunks.
Assemble the layers in this order. Lasagna sheet – salmon cheese sauce – sprinkle mozzarella and tomatoes. Repeat layers.
Bake for 1 hour. Sprinkle shaved Parmigiano Reggiano cheese over the top.
Make sure you have plenty of crusty Italian bread to go with it. And, maybe even a nice refreshing Pino Grigio or a buttery Chardonnay to compliment the amazing sauce.
