Ingredients for Turmeric Cauliflower Soup Recipe
1 large or 2 small heads of cauliflower, chopped
1 red onion, chopped
1 carrot, peeled and chopped
1 stalk of celery, chopped
6 garlic cloves, minced
3 tablespoons extra virgin olive oil
1 teaspoon turmeric
1 tablespoon fresh thyme, chopped
1 tablespoon fresh ginger, grated
1 teaspoon ground cumin
1/2 teaspoon sea salt
2 cups veggie or chicken broth

Garnish
Fresh lime juice
Freshly ground black pepper
Sour cream (if desired)

Directions for Turmeric Cauliflower Soup Recipe
Preheat oven to 425 degrees Fahrenheit. Prepare a baking sheet with the olive oil and garlic. Add cauliflower, carrots, onion, and celery and coat well. Roast these for 35 minutes. Flip them half way through cooking. After they are done roasting, add them to a large sauce pan and coat with the spices over medium heat for 5 minutes. Add your broth to the pan, stirring well. Increase heat to high heat and wait for it to boil. Once it is boiling, turn it down to a simmer, cover with a lid, and let it sit for 25 minutes on low heat. Remove from heat and serve it to your friends and family with fresh lime juice, pepper, and a dollop of sour cream if you like!
